Baking without gluten, wheat, yeast, soy, dairy, eggs, and corn can be quite the challenge. But here are a few products that have greatly helped me:

Spectrum Vegetable Shortening...this is made from palm oil and is a safe alternative to butter or normal shortening. I purchase this locally at Fred Meyer or Whole Foods. I've also linked to where you can purchase online.

Enjoy Life Mini Chocolate Chips. These are allergy friendly and free of dairy, corn, gluten, wheat, soy, nuts, etc.

Coconut Oil: When baking I use this as a substitute any time the recipe calls for oil. It is solid in a jar so you have to melt it in order to use it. Locally, I think Trader Joe's has the best price, but you can also find it at Whole Foods or Fred Meyer or New Seasons.

GF Oat Flour - I get this in bulk at Bob's Red Mill. It is a bit heavier than other flours, but doesn't have that different aftertaste you sometimes get from sorghum flour, for example. Really delicious in cakes and cupcakes.

Sprouted Bean Trio - this is one of my versions of "fast food". It's a blend of beans and lentils that only need to simmer for 15 minutes. They make for a fast and yummy soup! Locally, I buy this at Costco, but you can also purchase online.
